Ingredients :
1/2 lb. side pork, cut into small cubes
3 cloves garlic, minced
1 small onion, chopped
1 tomato, cubed
1/2 squash, cubed
10 pieces okra
a bunch of long beans (sitaw), about 1 1/2 inch long
2 eggplants, sliced
1 bitter melon (ampalaya), sliced
5 cups water
1 tsp. bagoong alamang (salted shrimp paste)
1 bouillon pork cube (optional)
vegetable oil
How to cook:
1. In a large casserole, heat oil over medium heat.
2. Sauté onion, garlic and tomatoes.
3. Add the pork, stir for 5 minutes then add water, bagoong alamang and pork cube.
4. Cover and simmer until the pork is tender.
5. Add long beans then the bitter melon. Stir-fry for a minute or two.
7. Then add the rest of the vegetables.Gently stir.
8. Lower the heat and simmer covered over low heat until vegetables are tender. Do not overcook.
9. Serve hot with a lot of steamed rice.

Ingredients:
1 lb ground chicken
8 oz can water chestnut, drained and chopped
1 head iceberg lettuce
1/4 cup roasted peanuts, chopped
1 pouch sauce for lettuce wrap (available in groceries)
1 small onion
3 pieces garlic
cooking oil
How to cook:
1. Heat oil in saucepan. Saute onion and garlic until fragrant.
2. Add chicken and stir until browned.
3. Then add the chestnut and peanuts and stir-fry for 2 minutes.
4. Add 3/4 pouch of the sauce for lettuce wrap. Simmer.
5. Tear the lettuce leaf into 4 pieces. Scoop 1 1/2 tsp. of the mixture into the lettuce and roll.
6. Use remaining sauce per taste.

Ingredients:
marinated salmon fillet (store bought)
asparagus
salt
How to cook marinated salmon fillet:
1. Preheat oven to 375 F
2. Place marinated salmon fillet skin side down in baking pan.
3. Bake for 15-18 minutes.
How to cook asparagus:
1. Trim tough root ends from asparagus spears, then cut into 2-inch lengths.
2. Place in microwave-safe bowl. Sprinkle asparagus with salt.
3. Microwave on high power for 5 minutes or until asparagus is tender.
4. Serve immediately as a side to the baked salmon fillet.

Ingredients:
okra
water
vinegar with alamang (dipping sauce)
How to cook:
1. In a saucepan, boil okra in water. Do not stir okra while cooking.
2. Boil okra until fork tender or no more than 10 minutes.
3. Serve with vinegar with alamang as dipping sauce.

Ingredients:
meatballs (see http://www.magluto.com/filipino-recipe-meatballs-version-2)
1 1/2 lbs spaghetti noodles
4 quarts of water
1 bottle banana catsup
1 pack spaghetti sauce
3 pieces garlic, chopped
1 onion, chopped
cooking oil
1 tablespoon of sugar
cooking oil
salt
grated cheese
How to cook:
1. On a saucepan, put little bit of oil and sauté the garlic and onion.
2. Add the spaghetti sauce, banana catsup and 1/2 cup of water. Mix them well.
3. Cover and let it simmer slowly for about 15-20 minutes. Add the sugar then the meatballs.
4. Cover and let it simmer for another five minutes.
5. In a large pot, put about 4 quarts of water and bring to a boil.
6. Once the water is boiling add salt and 2 tablespoons of cooking oil.
7. Then add the spaghetti noodles. Cook them as per package directions (usually 8-10 minutes for al dente {cooked but still a little firm})
8. Drain. Pour the sauce on the top and some grated cheese.

Ingredients:
1/2 lb ground beef
1/2 lb ground pork
2 carrots, chopped finely
1 onion chopped finely
3 pieces garlic, minced
1 egg
3 tbsp flour
salt and pepper
How to cook:
1. In a bowl combine all ingredients. Season with salt and pepper.
2. About a tablespoon of the mixture shape into a meatball.
3. Boil water in a saucepan. Drop the meatballs and boil for 10 minutes.
4. Heat oil in a frying pan. Fry the boiled meatballs until golden brown in color.
5. Serve with catsup.

Ingredients:
1 lb pork steak
1 cup soy sauce
1 lemon
1 tbsp sugar
cooking oil
How to cook:
1. Combine soy sauce, lemon and sugar.
2. Marinade the pork steak overnight.
3. Remove the pork steak from the marinade sauce.
4. Heat oil on a skillet and fry until cooked.
5. Serve with steamed mixed vegetables and rice.

Filling Ingredients:
8 egg yolks
1 can condensed milk
2 tsp shortening
1 tbsp sugar
1/3 tsp lemon zest
Meringue Ingredients:
8 egg whites
1 tsp cream of tartar
1 1/2 cups sugar
1 tsp vanilla extract
1/4 -1/2 cup powdered sugar
How to cook filling:
1. Mix egg yolks and condensed milk in a double boiler. Stir well.
2. Add the shortening and sugar and continue stirring for 5 minutes.
3. Fold the lemon zest into the mixture. Continue stirring until thick. Remove from heat and set aside.
How to cook meringue:
1. Beat egg whites and cream of tartar in a large bowl with an electric mixer until soft peaks start to form.
2. Gradually add the sugar and vanilla extract. Continue beating until stiff peaks form about 10 minutes. Do not overbeat.
3. Preheat oven to 375F.
4. Line greased baking tray with waxed paper. Sprinkle powdered sugar on paper.
5. Spread the egg white mixture on the waxed paper covering it entirely. Bake until top is brown, about 10 minutes.
How to cook Braso de Mercedes:
1. Have another greased baking tray ready. Line with waxed paper. Invert the meringue onto the waxed paper so that brown side is below.
2. Spread the filling evenly on the meringue and roll into a log.
3. Dust with powdered sugar.

Ingredients:
1 lb pork spare ribs, cut into serving size pieces
1 medium onion, quartered
1 tbsp. peppercorns
fish sauce (patis)
half of a large head of cabbage, quartered
2 potatoes, quartered
2 carrots, cut in 4 pieces/carrot
How to cook:
1. Line the spare ribs on a rack in a single layer. Place a tray beneath the rack to catch the dripping. Broil the spare ribs for 15 to 20 minutes.
2. In a casserole, pour about eight cups of water. Add the onion and peppercorns. Bring to a boil.
4. Add the broiled spare ribs in the casserole. Season with fish sauce. Cover and bring to a boil. You will notice that scum will not form on the broth.
5. When the pork is almost done, add the carrots, potatoes and cabbage.
6. Bring to a boil then reduce the heat to low. Cover and simmer for about 10 minutes or until the vegetables are done.
7. Serve hot.

sour cream (optional)
How to cook:
1. Scoop sisig into the tortilla.
2. Top with shredded cabbage and fold.
3. Serve with sour cream or lime.
